Aaloo Paneer Tikki

 


Namaskaram Everyone 🙏,

                   Hope everyone is doing well and had a good weekend for yourself too. I still don't understand how 6 months flew by just staying inside the home and from the end of this week my little one is getting back to the school routine, so we thought as we had no vacation this year, we planned a last minute camping trip. It was quite a relaxing weekend to be honest, felt like time was slowing down for us completely. 

                 Cooking in the campfire was the best part, though I've seen my grandmom cook using woods, I've not personally done that. It was sure an unique experience this time - stargazing and screaming when we saw some shooting stars fly by was surely the highlight, I am excited to share some pictures below.


                    

                Now coming to the recipe for today; I have Tikki with potato and paneer. It is a simple recipe that can also be made quickly for breakfast or snack time, prepare ahead and freeze them as they serve as perfect burger patties too.  Now being vegetarian, its hard to find burger patties other than ones with beans in United States, so when it rains or snows I make sure to make these for our lunch too with a salad on the side, now without making you read too much - Lets walk this recipe together.


Ingredients:

For the spice powder:

  • Crushed Black pepper - 1/2 tsp
  • Carom Seeds / Ajwain - 1/4 tsp
  • Fennel Seeds - 1/2 tsp
  • Cumin Seeds - 1/2 tsp
  • Aamchur / Dry Mango Powder - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Kashmiri Chilli Powder - 1/2 tsp
  • Kasoori Methi - 1/2 tsp

    For the tikki:

    • Boiled Potato medium sized - 2 no's
    • Grated Paneer - 1 cup
    • Prepared spice powder mix
    • Ginger Garlic paste - 1/2 tsp
    • Salt - 1 tsp
    • Corn Flour - 1/4 cup
    • Bread Crumbs(Optional) - 2/3 cup
    • Oil - as needed for shallow frying


    Preparation Method:

    • Take a clean grinding jar, Add black pepper, carom seeds, fennel seeds into it

    • Also add cumin seeds, dry mango powder, garam masala, kashmiri chili powder

    • Don't forget the kasoori methi along and grind everything together to fine powder, keep aside. For tikki lets take a clean bowl 

    • Add the boiled potatoes and mash well using a potato masher. now add the paneer and mix well to combine

    • Add the prepared spice powder and mix well so everything comes together along with salt and ginger garlic paste

    • Finally add the corn flour and mix well. Apply some oil in hand and start making patties

    • If you wish you can quote those prepared patties in bread crumbs, it definitely acts as a good binder and give a good golden color for your tikkis, on the side heat oil to shallow fry the tikkis. once oil is hot enough place the tikkis and cook them until golden on both sides and serve with your favorite chutney on the side
