Basil Walnut Pesto Pizza

            Pizza is a flatbread topped up with a base sauce, cheese and lot of meat, vegetables and condiments. It is a popular fast food dish all over the world. The variations are endless and here is another variation with olive oil base pizza crust and basil walnut pesto as base sauce, spiced up with some sundried tomatoes and mushrooms with a sweet twist of pineapple along.


For Pizza Crust:
  • 1-1/4 cup all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • pinch of salt
  • 1 teaspoon sugar
  • 3 tablespoon olive oil
  • 1/2 cup yogurt
  • water if needed to knead the dough
For Basil Walnut Pesto:
  • 1 cup packed basil
  • 1/3 cup olive oil
  • salt and pepper as needed
  • 2 cloves garlic
  • 1/4 cup walnuts
  • 2 teaspoon chia seeds
For Pizza Toppings:
  • 1/4 cup pineapple, diced
  • 1/4 cup mushroom, sliced
  • 1/3 cup kalamata olives
  • prepared pesto sauce as needed
  • 1/4 cup sundried tomatoes, chopped
  • grated mozzarella cheese as needed

  • To start making Olive Pizza with Basil walnut pesto, sundried tomatoes, pineapple and mushroom, in a food processor add all the ingredients under "Basil Walnut Pesto" list and process to a smooth paste, keep aside.
  • In a medium bowl, add all purpose flour, baking powder, baking soda, garlic powder, onion powder, salt, olive oil, sugar and stir well. Add curd and knead, sprinkle some water as needed to form a dough. Rub some oil on the top of dough, cover and keep aside for 2 to 3 hours. 
  • Pre heat oven to 400'F. Dust some flour on the counter top. knead the dough couple of times and roll with rolling pan or using your hand to 8 inch diameter.
  •  Use a fork and poke some holes all over. Place the dough on the pizza stone and bake until the top is slightly golden. 
  • Remove the pizza and spread prepared basil walnut pesto. Sprinkle the cheese generously. Sprinkle the toppings like pineapple, mushroom, kalamata olives, sun dried tomatoes and bake until the cheese melts. Serve hot.
