Zucchini Feta Bruschetta

            Bruschetta is a starter dish served with a topping on a crispy bread drizzled with some herbed oil, commonly olive oil. Zucchini Feta Bruschetta is a variation where we are using fresh chopped zucchini with some chopped tomatoes and Feta cheese. Dried parsley is also added for flavoring. This is a perfect bite sized appetizer that can be served rich with some fresh olive oil drizzled on the top.

For topping:
  • 1/4 cup of feta cheese
  • 1 small zucchini, finely chopped with skin
  • 1 medium tomato, finely chopped
  • 1 clove garlic, finely minced
  • 1/3 cup raisins, finely chopped
  • 2 tablespoon olive oil
  • 1/2 teaspoon dried parsley
  • salt and pepper to taste
For Bruschetta arrangement:
  • 1/2 French Bread, 1/4 inch thick sliced
  • 2 tablespoon olive oil


  • To start making Zucchini Feta Bruschetta, in a medium bowl add all the ingredients given under "For Topping" list. Stir well and refrigerate for half hour or until cold.
  •  Heat up the oven to broil setting, arrange the french bread slices with an inch space and brush with some olive oil on all slices. 
  • Toast them until slightly browned. Before serving place a scoop full of prepared zucchini topping on the toast and drizzle some olive oil on the top and serve.
