Indian Filter Coffee

                 Perfect mix of Milk, Sugar and Decotion (Brewed Coffee) is something amazing for your taste buds and so is Filter Coffee. The Most Famous Coffee from southern part of India prepared using a special filtering process. This coffee would simply boost you with happiness and smiles. The aroma the coffee would bring out is really mesmerizing, it is like a wake up call in the morning from your kitchen.

                   I was brought up in chennai and so I am a Filter Coffee lover. We had a Shivagami Coffee powder shop in Mint area. People line up for their coffee powder as they powder them fresh before your eyes based on our requirement. When I visit Mylapore temple we make sure to finish our breakfast from Karpagambal mess and order Filter Coffee in the end, that is served in a bronze or pithalai dawara aromatic coffee to die for. This was always the method of making coffee in Chennai but as many companies introduced Instant coffee varieties and coffee makers, people started moving on including me.

            When we had a weekend of relaxed time at RV's ( house, as her parents are here, we planned to visit some places in New York. Kids had fun together in New York's Central Park and the next day we had a Barbeque lunch and more of aunty's(Rv's mom) care. Well, that was one fun weekend. RV got some Narasus Coffee powder from an Indian store. Aunty prepared great filter coffee using that and I thought of the commercial while sipping - "Narasoos Coffee ya Besh Besh romba nalla irukku". Now who will not remember these words from their ads? She packed some coffee powder for me seeing my craziness for the coffee, so I decided to post this.

Ingredients: (Serves 3 people)

For the Decotion:
  • Coffee Powder - 3 heaped teaspoons (Coffee powder with chicory)
  • Water - 1 cup or required to fill the filter

For Making Coffee:
  • Decotion - 1/4 cup
  • Whole Milk - 1 cup
  • Sugar - 1-1/2 teaspoon
(The above ingredients are based on servings. Decotion will be strong so adjust accordingly, Sugar and Milk can also be added according to your need. I use a small filter that holds exactly 1 cup of decotion and it gives me some extra decotion than needed so choose your coffee filter size according to your needs)

  • The picture shows the Coffee Filter with its parts. Arrange them in a way that the chamber with filter holes are on the top. Now add 3 heaped teaspoons of coffee powder.

  • Press the coffee powder with slight pressure using a spoon or hand to settle them down firmly. Remember not to press hard as the water will not get through the powder nor keep it loose as the decotion will not be strong. Place the holder on the top. Boil a cup of water or as required to fill the filter.

  • Pour the water gently in the filter until the rim and close immediately. Wait for 20 to 30 minutes or until the decotion is completely collected in the below chamber. Remember the filter will also be hot to handle.

  • Boil the milk until it froths, Switch off, add sugar and stir well. Add the required decotion according to your preference of dark or light coffee. Froth and serve hot.

My Notes:
  • Always use whole or full cream milk. Milk freshly boiled gives you a tasty filter coffee.
  • Decotion can be stored in the refrigerator for a day.
  • Decotion should never be reheated. if you want to heat then keep the decotion chamber in a bowl filled with hot water.
  • Adjust your decotion according to your preference of dark or light coffee.
