Couscous with Chicken and Vegetables

          Have you ever faced days where you feel to have something healthy with a bowl full of proteins and vitamins added. Well this is the recipe I ended up one such day. So simple and easy as it gets ready in less than 10 minutes. Rich and healthy dish with no compromise in taste. 

Ingredients: (Serves 2 people)
  • Chicken Tenderloin - 2 strips (Cut them to small pieces)
  • Couscous - 1/3 cup (Cooked as per package Instructions)
  • Salt - as needed
  • Pepper - as needed
  • Butter - 1 teaspoon
  • Mixed Vegetables - 1/2 cup (I used Frozen)

  • Cook Couscous as per your package instructions and keep aside. In a pan heat butter, add salt, chicken and cook until chicken is completely done. Stir in mixed vegetables and sprinkle some water and close cook until vegetables get soft and tender. Sprinkle pepper and switch off.
  • Either you can stir couscous with chicken and vegetables or make a bed of Couscous and top with chicken and vegetables and serve.

 It was an irresistible lunch delight for me and my little one
