Mostaccioli Rigatoni sided with Broccoli,Beans

              Mostaccioli is a type of tube pasta with stripes and shaved edges. We loved only Alfredo sauce for pasta. Having the same again and again was kinda boring. So I tried my own version of pasta-well of course with an indian touch. This is the second time I'm making this and my hubby loves it. Packed some for his lunch - and heard that there was a fight among his friends. Well that was my credit about its taste. So here to share the version of pasta my family loves.

               Well, we side this with Broccoli, Mushroom & Beans. I did not have mushrooms in stock so i chose Broccoli and Beans.


For Pasta:
Boiled Mostaccioli / Pasta - 3 cups
Onion - 1 cup (finely chopped)
Tomato - 1/2 cup (Finely chopped)
Butter - 1 tablespoon
Olive oil - 2 tablespoons
Garlic - 2 tablespoons (Finely chopped)
Salt - As needed
Soya sauce - 1 teaspoon
Chilli sauce - 1 teaspoon
Tomato sauce - 1 tablespoon
Chilli powder - 1 teaspoon
Coriander powder - 1-1/2 teaspoon

For Toasting Broccoli & Beans:
Broccoli Florets - 15-20 no's
Beans - 10 no's
Olive oil - 1/2 teaspoon
Crushed Pepper - 1 tablespoon
Salt - As needed
one Cookie / Dripping Tray
Foil paper to cover the tray


For Making Pasta:
  • Heat Olive oil, add chopped garlic(let it turn slightly brown),add onions and saute till they are golden brown.

  • Add Chilli powder, Coriander powder and saute for one minute.Add tomatoes and cook until they are soft(its better tomatoes are half cooked else it will result greasy)(i forgot to take picture after adding tomatoes)

  • Now add pasta and mix well. Then add Chilli sauce,Tomato sauce,Soya sauce and mix well.(Always add sauce in the end because sauce looses flavour if its let to cook long).

  • Well main course is ready so lets go for side.

For Toasting Broccoli & Beans:
  • Take a bowl and mix olive oil with crushed pepper(add salt if you need, i do not add because i like it plain). Mix the vegetables well with oil and pepper.

  • Take a baking tray, wrap it with foil paper and spread the vegetables. Heat oven at 250'c and toast the vegetables for 15 minutes.

  • Vegetable side is ready for serving with your pasta.
