Saatvik Mint Chutney

            I hope everyone is doing wonderful and enjoying last week of summer. My little one has started her school online and things are going at rocket πŸš€ speed. I am not understanding how my day starts and ends because its that busy - that's how life should be isn't it πŸ˜ƒ. New plans on my everyday schedule on how to have my day is still work in progress πŸ˜‚, its going to be a week or two to get settled into this new norm for sureπŸ™ˆ. 

           I am going to try posting recipes on my blog but will sure try to keep up to atleast once a week(note to myself 😜). For today its a simple Saatvik Chutney recipe using Mint from our summer garden. We are not using any negative pranic ingredients here so if you are looking for ways to cook and follow saatvik lifestyle I'm sure these recipes will help. Lets walk this recipe together.

Ingredients:

  • Mint (chopped) - 1/2 cup
  • Coconut (grated) - 1/3 cup
  • Bengal gram - 1 tbsp
  • Cumin Seeds - 1/4 tsp
  • Black pepper (crushed) - 1/4 tsp
  • Salt - 1/4 tsp
  • Water - 1/4 cup
For Seasoning :
  • Oil - 1 tsp
  • Mustard seeds - 1/4 tsp
  • Urad daal - 1/4 tsp
  • Curry leaf - 3-4 leaves

    Preparation Method:

    • Take a clean mixer jar and add chopped mint into it


    • Along with grated coconut and bengal gram


    • Add cumin seeds, black pepper into this


    • Add the salt(adjust if needed) along with water


    • Now grind everything to fine paste


    • Transfer the ground chutney to a serving bowl and lets start preparing the seasoning by heating a small pan


    • Add oil and when it gets warm add mustard seeds


    • Along with Urad dhal and curry leaves, seasoning is ready


    • Add this seasoning to the prepared chutney and stir well. Serve with your favorite dish

    Aaloo Paneer Tikki

                       Hope everyone is doing well and had a good weekend for yourself too. I still don't understand how 6 months flew by just staying inside the home and from the end of this week my little one is getting back to the school routine, so we thought as we had no vacation this year, we planned a last minute camping trip. It was quite a relaxing weekend to be honest, felt like time was slowing down for us completely. 

                     Cooking in the campfire was the best part, though I've seen my grandmom cook using woods, I've not personally done that. It was sure an unique experience this time - stargazing and screaming when we saw some shooting stars fly by was surely the highlight, I am excited to share some pictures below.


                        

                    Now coming to the recipe for today; I have Tikki with potato and paneer. It is a simple recipe that can also be made quickly for breakfast or snack time, prepare ahead and freeze them as they serve as perfect burger patties too.  Now being vegetarian, its hard to find burger patties other than ones with beans in United States, so when it rains or snows I make sure to make these for our lunch too with a salad on the side, now without making you read too much - Lets walk this recipe together.


    Ingredients:

    For the spice powder:

    • Crushed Black pepper - 1/2 tsp
    • Carom Seeds / Ajwain - 1/4 tsp
    • Fennel Seeds - 1/2 tsp
    • Cumin Seeds - 1/2 tsp
    • Aamchur / Dry Mango Powder - 1/2 tsp
    • Garam masala - 1/4 tsp
    • Kashmiri Chilli Powder - 1/2 tsp
    • Kasoori Methi - 1/2 tsp

      For the tikki:

      • Boiled Potato medium sized - 2 no's
      • Grated Paneer - 1 cup
      • Prepared spice powder mix
      • Ginger Garlic paste - 1/2 tsp
      • Salt - 1 tsp
      • Corn Flour - 1/4 cup
      • Bread Crumbs(Optional) - 2/3 cup
      • Oil - as needed for shallow frying


      Preparation Method:

      • Take a clean grinding jar, Add black pepper, carom seeds, fennel seeds into it

      • Also add cumin seeds, dry mango powder, garam masala, kashmiri chili powder

      • Don't forget the kasoori methi along and grind everything together to fine powder, keep aside. For tikki lets take a clean bowl 

      • Add the boiled potatoes and mash well using a potato masher. now add the paneer and mix well to combine

      • Add the prepared spice powder and mix well so everything comes together along with salt and ginger garlic paste

      • Finally add the corn flour and mix well. Apply some oil in hand and start making patties

      • If you wish you can quote those prepared patties in bread crumbs, it definitely acts as a good binder and give a good golden color for your tikkis, on the side heat oil to shallow fry the tikkis. once oil is hot enough place the tikkis and cook them until golden on both sides and serve with your favorite chutney on the side

      Saatvik Mango Sprouts Salad

                       I hope everyone are doing well. Am sure 2020 is going to be the year that will never be forgotten. The world has changed because of one virus. Things we took for granted were also off limits to reach, I feel very sorry for people who had to suffer with Covid and to everyone who lost someone near and dear.

                       My heartfelt Gratitude to all Medical Professionals, Front liners and everyone who stood upfront for many other lives who were suffering, I still can't believe how the year started, its almost to end and there are no changes. Our homes are playing the roll of office rooms, schools, playgrounds and more. I hope Mother Earth Heals sooner.

                       At the same time I Feel so happy to be back to blogging after so many years. This blog has been something special to me always and just getting back to something that I love to do is sure a happy feel. My husband was the biggest support when I started this blog and he is again the push to restart my blogging.

                         Here I have a simple Saatvik Mango Sprouts Salad as a start. This is a very easy recipe and a healthy one. Our family is trying to eat atleast 50% of our meal raw by including fruits or raw vegetables or salads like these. My little one helped me with this recipe as this is one of her favorite salad too. With flavors like sweetness from mangoes, sourness from lemon, nuttiness from sprouts/groundnuts am sure this will be in your favorite salad list too, Lets walk this recipe together.


      Ingredients:

      • Peanuts(Soaked Overnight or 6-8 hrs) - 1/4 cup
      • Mung Bean Sprouts - 1/4 cup
      • Mango(Chopped) - 1/4 cup
      • Lemon Juice - 1/2 tsp
      • Salt - a pinch
      • Pepper(Crushed) - a pinch

        Preparation Method:
        • Take a clean bowl, Add Soaked Peanuts into it (make sure to soak the peanuts overnight or atleast 6-8 hrs) 


        • Now add sprouted Mung/Moong beans along with chopped Mango


        • Lets season the salad now with lemon juice, a pinch of salt


        • Add a pinch of crushed pepper. Stir well and serve

        Rye Breakfast sandwich with Cucumber and Eggs


        Rye is a grass grown extensively as a grain, a cover crop and as a forage crop. It is a member of the wheat tribe and is closely related to barley and wheat (Source : Wikipedia). The Bread made with Rye is a excellent substitute for regular sandwich bread. This is a simple breakfast sandwich made with boiled eggs, cream cheese and fresh cucumber. Enjoy this sandwich with a cup of Coffee or Tea or for snacks.



        Ingredients: (Serves 2 people)

        • 4 slices of rye bread
        • 1 teaspoon butter
        • 2 boiled eggs, crumbled
        • 1 tablespoon cream cheese, at room temperature
        • 1 small salad cucumber, thinly sliced
        • salt and pepper to taste


        Method:

        • To start making Rye Breakfast sandwich with Cucumber and Eggs, In a small bowl add crumbled eggs and cream cheese, stir well to combine. 
        • Place the 2 bread slices, brush some butter on each slice. 
        • Place thinly sliced cucumber into layer on each slice. 
        • Divide the egg mixture and spread evenly above layered cucumber. Sprinkle some salt and pepper. Butter the remaining bread slices and cover the sandwich with butter side down. 
        • Serve sliced in the middle.

        Makai Paneer Pakora



               
                    Makai Paneer Pakora is a deep fried fritters made with corn and paneer. When you look up for some fried fritters along with a hot cup of chai or coffee, try out this pakora made with some freshly grated paneer, mashed corn, green chili, chickpea flour and some spices that come together to make these fritters absolutely appetizing.

        Moong dal ladoo



                      I am a big fan of Besan Ladoo and my little ones favorite is Moong dal ladoo. They taste so similar too. They are so smooth and melting inside your mouth as you take your first bite. The taste to your ladoo is always based on the way you roast your lentils. We need to roast them on low flame evenly until aroma comes out and that makes these ladoos smooth and tasty.

        Five Spice Bean Burger




                     Five Spice Bean Burger is a burger with beans as the basic ingredient. The flavors are added in with Five Spice powder also called as Chinese Five spice powder. Preparing Fresh Five spice powder is very easy. It has Cinnamon, Cloves, Fennel, Star anise and peppercorns. They are roasted slightly and powdered fresh. These fresh spices are very flavorful and blend well with the beans.

        Ingredients:
        For making Five spice powder:

        • 2 inch cinnamon stick
        • 1/2 teaspoon cloves
        • 1 teaspoon fennel seeds
        • 1 large star anise
        • 1 teaspoon peppercorns

        (Roast all the ingredients on low heat until aroma comes out, cool down and powder finely)

        For Burger:

        • 7 oz can Great Northern beans
        • 1/2 cup Italian bread crumbs
        • 1 large egg, beaten
        • 1/2 teaspoon ground pepper
        • 1 teaspoon garlic powder
        • 2 tablespoon fresh cilantro, chopped
        • 1 tablespoon soy sauce
        • 1 teaspoon sugar
        • 1 teaspoon lemon juice
        • 1 teaspoon olive oil
        • 3 tablespoon vegetable oil
        • 1 teaspoon five spice powder
        • salt to taste
        • 3 hamburger buns
        • Cheese slices as needed
        • 2 tablespoon mayo or as needed
        • Mixed Greens / Lettuce leaves as needed


        Method:

        • To start making Five Spice Bean Burger, drain the beans to a medium bowl, reserving the liquid. Mash the beans using a fork or potato masher. 
        • Add bread crumbs, egg, pepper, garlic powder, soy sauce, sugar, lemon juice, cilantro, five spice powder with required salt. Mix all the ingredients until the burger holds together. If needed add a little from the reserved bean liquid but it should not become too wet. 
        • Divide the batter to 3 equal portions and shape into patties. Heat 3 tablespoons of vegetable oil in a cast iron skillet over medium high heat. Add the patties and cook, turning once, until a crisp crust forms on both sides. Place the cheese slice on the top of cooked burger, once it starts to melt, switch off and remove to a plate. Meanwhile, warm up the burger buns in a 300'F oven for about 4 to 5 minutes. 
        • Spread mayo on each warm burger bun. Start layering the burger by adding lettuce then layer the cooked burger patties and cover with the top burger bun. Serve warm.
